Flourless Peanut Butter Cookies

It's my turn to evangelize "the" cookies. Brought to prominence by Hello World, these tasty treats take no time at all and are absolutely fantastic. I feel an obligation to share the goodness with the world given how many batches I've made and how much time I've spent appreciating their greatness:

Flourless Peanut Butter Cookies
1 egg - beat lightly in a small bowl with a fork
Add 1 cup smooth peanut butter (chunky works too)
Add 3/4 cup sugar
Add 1/4 t salt
Add 1/2 t baking soda
Mix all with a fork. Do not overbeat - just enough till well mixed.
Add 3/4 c chocolate chips, or whatever amount you prefer, and mix in with fork.
Spoon onto cookie sheets so you make about 2 dozen.

Bake at 350 for about 12 minutes.

Hey Jill,

I have an even easier Peanut Butter Cookie recipe. It came from Christmas, Florida.

1 Cup of Peanut Butter (creamy or chunky)
1 Cup of Sugar
1 Egg.
Mix all together. Make peanut butter balls and squish with a fork. Sprinkle sugar on them and bake @ 350 for 10-12 minutes (or until brown).

They taste great and are sooooo easy to make.
